Món kho thịt là một trong những món ăn truyền thống phổ biến và đặc trưng nhất của ẩm thực Việt Nam. Với hương vị thơm ngon, đậm đà, ngấm đẫm những gia vị đặc trưng và dễ chế biến, không khó hiểu vì sao món kho thịt lại được ưa chuộng đến vậy, đặc biệt là trong những ngày se lạnh của mùa đông hay những cơn mưa rả rích vào buổi chiều.

Nguyên Liệu Và Chuẩn Bị:

  • 500g thịt ba chỉ tươi ngon. Chọn phần thịt ba chỉ có một lớp mỡ mỏng, mềm và không quá nhiều gân.
  • 2 muỗng canh nước mắm ngon, nước mắm nên chọn loại đạm đặc, mặn vừa phải. Tốt nhất nên dùng nước mắm truyền thống ủ lâu năm.
  • 1 muỗng cà phê đường thố mịn. Đường giúp tạo vị ngọt thanh, cân bằng với vị mặn mằn từ nước mắm.
  • 1 muỗng canh nước mắm loãng để phi thơm với tỏi hành.
  • 2 tép tỏi to, 1 củ hành khô. Tỏi và hành là những gia vị quan trọng tạo nên hương thơm đặc trưng cho món kho thịt.
  • Một ít tiêu xay, bột ngọt để tô điểm vị đậm đà.
  • Một ít dầu ăn để phi thơm và kho thịt.

Sơ Chế Và Chuẩn Bị:

  • Thịt ba chỉ rửa sạch với nước muối ấm để khử mùi hôi, thấm khô với giấy bếp hay khăn sạch. Xắt thịt thành những miếng vừa ăn, khoảng 3-4cm.
  • Tỏi bâm nhỏ, băm nhuyễn thành một khối nhuyễn mịn. Hành lạng đập dập cắt khúc vừa ăn.
  • Pha nước mắm với đường và bột ngọt theo tỷ lệ vừa khẩu vị. Tiêu xay nhuyễn thêm một ít vào cho đậm vị nữa.

Các Bước Kho Thịt:

Bước 1: Phi thơm tỏi hành với một ít dầu ăn. Lưu ý khi phi phải liên tục khuấy đều để tỏi hành không bị cháy khét và thơm lừng.

Bước 2: Cho miếng thịt ba chỉ vào đảo đều cho thịt ngấm gia vị tỏi hành thơm lừng. Xào săn lại thịt với lửa lớn.

Bước 3: Đổ nước mắm pha gia vị vào kho cùng thịt. Điều chỉnh lửa nhỏ để thịt kho được từ từ, không bị trào ra ngoài. Kho khoảng 40-60 phút, đảo đều thỉnh thoảng và hớt bọt mỡ cho thịt chín đều, mềm và mọng nước.

Bước 4: Nếm nếm gia vị, điều chỉnh lại cho vừa khẩu vị. Nếu thấy đậm đà quá có thể cho thêm một ít nước sôi, chút đường. Ngược lại nếu quá nhạt sẽ bổ sung thêm nước mắm, tiêu. Tắt bếp khi thịt đã mềm, mọng nước và thấm đẫm nước kho thơm lừng.

  • Khi kho, nên đảo đều đều tay để thịt không bị khét hay cháy khê.
  • Nước dùng để kho không nên quá nhiều cũng không quá ít để có độ đậm đà vừa phải.
  • Nếu thấy nước kho quá nhạt có thể rút gia vị bằng cách cho thêm nước mắm, đường, bột ngọt.
  • Thi thoảng cho thêm nước sôi vào để thịt luôn mềm và mọng nước.
